I admit is my personal opinion: I hate the term apericena (aperi-dinner). Maybe because my appetizers are rich enough to be a dinner on their own, with no need of specification.
So here you have appetizers from mine. What I suggest is: bruschetta, any kind of them. Non only bread-based, but also tacos or vegetables.
Choose different bread:
- classical slice of bread with crust,
- bread with olives or nuts,
- baguette and so on.
You will have different tastes, so match with a salad or a soup, and no one will be bored.
Choose innovative seasoning:
- edible flowers,
- pineapples or mangos,
- cheese with herbs.
Dare new mix of flavors and taste (just try by yourself before!)
Bruschette: Classical Italian appetizer
First of all the classical Italian appetizer: a slice of bread with oil and garlic brushed on, and many little fresh, confit or dried tomatoes. You can also use them all, place them on a tray divided in 3 parts.
Don’t miss Swiss cheese, olive, fresh herbs (basil, parsley or coriander, sage, fresh mint), jam, or bacon.
Baguette with vegetable and cheese
Another classical recipe: baguette with vegetable and cheese. Use your fantasy, choosing vegetables you already have, a light peperonata, pan-fried mushrooms, arugula and broad bean.
Finally Parmigiano flakes and brie to be grill in oven to melt.
And you cannot forgot the cheese tray: with marmalades and jam.
Your host will serve themselves directly from the tray, tasting cheese on bread, or along with onion jam, pear or tangerine marmalade, or lavender or beer jams or simply honey.
Many vegetables: peas, broad beans, spinach, asparagus, Swiss chard. Hazard with vegetables, mixing with pesto or ricotta cheese, grated Pecorino or garlic mayonnaise.
Many legumes: for example, garbanzo beans with tomato and onions, or lentil cream or a “fagiolata”.
To avoid an only-bread-appetizer, choose alternative bases, such as chips, tacos or salads.
“Crostoni” as a single course: large grilled slice of bread, you pour garlic dressing or guacamole on, fried egg or poached egg, Praga ham, a little salad, a fresh onion.
It must be eaten with fork and knife, and along with a fresh salad becomes an appetizer everyone will love.

And to drink?
Buy Prosecco, which generally anyone likes. You can also prepare Spritz, or gin lemon.
Use large glasses for wine and prefer the red one.
One for all the Nebbiolo, perfectly matching to garlic, cheese and vegetable.
Don’t discard the rosé: if very fresh is excellent!
