This is a very simple recipe: you only need 1 egg for every 100 g (1/4 cup ) of flour. And nothing more.
Combine the ingredients until you reach an elastic dough. Then, roll it on the table.
Once rolled, be sure you have a thin dough; much better if you have the appropriate rolling machine.
Otherwise, do it by hand, using a rolling pin and making it very thin.
Green egg pasta
The green pasta: a good alternative to the traditional one.
- 300 g (2 1/3 cups) of flour
- 2 eggs
- 50 gr (2 oz) of spinach
In a saucepan , bring water to boil and add the spinach for some minutes.
Add the mashed spinach to eggs and flour and process the dough as usual (see above).
