The so called “Insalata di rinforzo” is a classic cauliflower-based dish made in Naples.
It is a tradition side-dish in Christmas and New Year’s Day lunch.
Cauliflower italian salad – Ingredients:
- 1 large cauliflower,
- pickled vegetables in vinegar,
- bell peppers in vinegar,
- hot eggplant in vinegar,
- fresh or in oil anchovies,
- cucumbers in vinegar,
- large green olives,
- baked black olives,
- salt, vinegar, oil.
Wash the cauliflower, cut the tops and cook in salted boiling water.
In a large tray, place all the ingredients: cauliflower, all the vegetable in vinegar, olives, anchovies, capers.
Season with a mix of oil and white vinegar, adding 3 parts of oil any 2 of vinegar.
