Cannelloni are nothing but stuffed lasagne forming little rolls.
Cannelloni can be stuffed with all the seasonings for lasagne, but especially as follows:
- ricotta and spinach: boil spinach, drain well and blend with the same amount of ricotta. Stuff cannelloni with spinach, ricotta, salt and parmigiano well mixed. Cover with besciamella and parmigiano;
- cannelloni with meat: stuff cannelloni with firm or white ragù and cover with besciamella, parmigiano and a little tomato sauce added with a spoon;
- cannelloni with ham and mushrooms: stuff cannelloni with minced sautéed mushrooms and ham steak. Cover with besciamella and parmigiano.
