Homemade Tagliatelle and Fettuccine are easy to make: just few steps to make egg pasta.
Making egg pasta homemade is not expensive. You need very “poor” ingredients but they result in a special taste.
Once eaten, you will never leave it. Its taste is undoubtedly better than any other kind of fresh pasta.
Be sure you will never buy other again.
Ingredients (Serve 1):
- 100g flour
- 1 egg
If you have the Bread Machine with ‘pasta’ function, just put the ingredients inside the basket and press On: you will have a very smooth and easy to manage dough. Add 20 g (¾ oz ) of boiled and drained spinach if you desire a green pasta.
If you don’t have the Bread Machine, pout the flour on a pastry board or in a large bowl and make a space in the center to host the eggs. Knead from the center, breaking eggs and gradually adding flour.
When you have a ball of dough, keep on actively kneading for 10 minutes on the worktop: make it smooth uniform, and elastic.
Set aside some minutes, covered in plastic.
Now make small portions and roll by hands (or using a rolling pin), being sure they are not very long.
Roll out the dough making long thin stripes: start from the widest position of the tagliatelle machine, and continue with the narrowest, and the result will be a very thin and elastic lasagne dough.
If it becomes too long, cut any 30 cm, the right measure of tagliatelle. Once rolled up the egg dough, set the machine on the tagliatelle-maker function. The dough will be cut in
tagliatelle o fettuccine.
If you cook them immediately, place them on a top covered with flour or on a tray or a rag. Let them dry on a rack for tagliatelle if you intend to cook them after. If you place them on the tray they would stick together and you should start the work again.
Bring water and salt to boil adding a little oil that will avoid fresh tagliatelle to stick together. with a ladle leave them drain well and place on a serving dish, basting with the sauce you have chosen (in this case a peeled tomatoes, basil and garlic sauce).
If you have exceeding dough, make a lasagna, too: made of fresh dough, it will be excellent!
