Here you have the recipe to make Pizza at home.
The recipe for homemade Pizza: easy, tasty, with a crunchy, thick or thin crust, as you like.
To make pizza, you should better use a flour rich of gluten, with Manitoba flour too.
Traditional dough for Pizza (kneaded by hand)
For any kg of flour:
- 2 tbsp of oil
- 5 g brewer’s yeast + ½ tsp of sugar
- 5 dl of warm water
- 10 g of salt
In a food processor put 1 kg flour with dry yeast, sugar, oil, and salt. Gradually add water until you have a ball of paste.
Then, knead it on a lightly flour-covered working plan; keep on keading for 5 minutes. Leave it rise in a bowl covered with a towel, until its volume is doubled (at least 4 hours). Remember: the most rising, the lighter pizza. You can leave it rising overnight.
With the Bread Machine
- 300ml (1+ ¼ cups) of water
- 1 tbsp of oil
- 1 tsp of salt
- 2 tsp of sugar
- 450gr of flour
- 8gr of yeast
After processing, the paste will be soft and elastic. If it is a little sticky, knead it with a little flour.
Pizza crust and cooking
- For thick crust: after the first leavening, in a pan covered with flour roll pizza by hand, leaving it leavening again covered with a towel.
- For an oily focaccia: after the second leavening in the pan, push your fingertips on the paste making small dimples. Pour abundant water, oil, salt, being sure of filling the dimples.
The right mozzarella: I choose the mozzarella for Pizza. The classic mozzarella (Fiordilatte) is good but with too much water in it.
The right cooking: bake in preheated oven at the highest heat. Pizza is cooked in 5-8 minutes and also in ventilated ovens.
