Here you have a tasteful and soft Italian cake suitable as a snack for your children. It a very simple cake of soft shortcrust pastry.
Very easy making: just weigh the ingredients and, in a bowl, stir with a wooden spoon. No more bowls are required, that is no more bowls to be washed. Moreover, your children can be involved in the making, because there are just few simple steps.
Using different ingredients any time, you can change look and taste of your cake.
- 200 gr (7 oz) of flour
- 170 gr (6 oz) of sugar
- 150-170 gr (5-6 oz) of butter, softened
- 2 eggs and + 1 yolk (scrambled with a fork)
- Grated lemon zest
- ½ pack of baking powder for dessert
- 1 pinch of salt
In a bowl whisk together all the ingredients, then add eggs and butter. Melt butter in the microwave. Stir fast with a wooden spoon until you have a thick cream. Pour in a baking dish (24-26 cm) and bake in oven from 30 to 40 minutes.
Before baking, you can also add some tbsp of marmalade on the dough directly on the dish for a richer taste. In this way you will have baked marmalade partly melted in the dough. It’s a treat!
You can find all the variations you wish, adding, zucchini cut into julienne, seeds (sesame, pumpkin, poppy seeds), cardamom, cinnamon, minced cloves, ginger, candied orange zest and orange marmalade.
Substitute 50-70 gr (2-3 oz) of flour with whole flour, add 1 tbsp of powdered cinnamon, 1 tsp of powdered ginger, 1 handful of sesame seeds and 2 finely sliced small apples.
You can add canned as well as fresh peaches. Both will result excellent. Try along with peach marmalade to boost taste, and a tbsp of sesame seed that can be combined well with this fruit.
Pear and chocolate
Add to flour 1 tbsp of unsweetened cocoa powder, half pack of dark chocolate, chopped, and 2 small chopped pears.
Add a crushed banana, along with a handful of raisin and a finely sliced apple.
