A classic Italian recipe from Emilia Romagna (Bologna, Rimini): the piadina.
Making Piadina is very easy and you need very simple ingredients (for 8-10 pieces)
- 500 gr (2lb 4oz) of flour 00
- 150gr (5 oz) of lard or around 70-80 gr (3 oz) of oil
- 250gr (9 oz) of warm water or milk (to make them compact and crunchier)
- 1 tsp (5 ml) of salt
Combine all the ingredients adding the liquid a little at a time, until a firm and solid consistency is reached.
Set aside for half an hour before rolling. Roll little balls of the same size and from the dough, then, using a rolling pin, roll them in little circles.
Cook on a very heated plate (or in a non-stick pan with no oil), stirring once. With a fork, break the bubbles that will form on the surface.
Stuffing at your taste, but at our home there are some typical Bolognese ingredients that cannot miss, such as Squacquerone (very soft, liquid cheese) and Friggione a special meal consisting in onions and tomato sauce cooked in a little lard (or oil) over very low heat for hours.
Add zucchini and eggplants pre-grilled and marinated in oil and salt, rocket, tomatoes, mozzarella, sliced and salad, microwave-cooked spinaches.
